You can use different fontsets in different frames.  I suggest you to
use a variable width font in a frame to read/write Greek and a fixed
width font in another frame for calendar and dired.  Open a new frame
with `C-x 5 f' or `C-x 5 b', just like you open a new window with `C-x
4 f' or `C-x 4 b'.
